"Once again Copley's stands out as the best restaurant in Palm Springs. Shannon, the Maitre D, greets everyone with warmth and good cheer and is helpful when suggesting a table. The atmosphere is romantic and peaceful, the patio misting system comfortably takes the edge off the heat, and the food superb. The specials on this particular evening were outstanding: seafood fettuccine was not a pasta dish with added fish... but an extraordinary melange of four seafood elements — lobster, swordfish, mussels, shrimp — served on a bed of pasta. Exquisite. Chocolate soufflé topped the meal, served by Gracie, arguably the best Waitperson in Palm Springs, bar none."
