"As a student two centuries ago, I used to visit L 'Evèch ' as we called it at least twice a week. Medieval-looking wall frescoes might persuade you that the place has been here as long as the nearby Cathedral, but in reality opened in 1952. Now it has become a highlight for fondue though crazy statistics point out that the world 's largest cheese producer is nowhere else than... the United States, ahead of Germany and France ! What the hell do they know about fresh, soft, flowered, washed, pressed, heated, raw, hard or melt varieties ? Hence the best fondue in Lausanne... Among its best-kept secrets : a roof-garden in Summer and a wonderful hot chocolate in Winter."
