"Folks leave the casino food behind and right along the strip is MInato's Japanese Restaurant. It features Japanese AND Korean food and YES IT HAS VEGAN VEGETARIAN OPTIONS. We went twice... two days in a row! When I say we I mean my husband a sushi lover, and me a vegan who is new to sushi world and not a fan of seaweed flavor. LOL sounds challenging? A little but Minato's was great and we both recommend it. I ordered the veggie tempura appetizers the tempura was nice, battered well but light and crispy and a good selection of veg! And as for vegetarian vegan options while not on the menu (not sure why they don't have their own section as the menu is a very nice sized one) I asked the wait staff about vegetarian/vegan options and was directed to the extra paper sushi checklist with 4 different rolls. The waiter also informed me they can customize just about any of the other rolls if I would like. I found that he was eager to help and knowledgeable as to the dishes etc as opposed to some places where they act like customizing for vegetarian or vegans is a pain... that was not the case here at all. Another bonus was that they also had (for an upcharge) soy wraps available instead of the usual Nori seaweed wraps! I LOVED IT! My Asparagus roll was simple rice, tempura asparagus and soy wrap, but rice was on point, asparagus tempura pieces were fresh and tasty and it hit the spot! It came with a dipping sauce, and of course ginger and wasabi if you want it. The avocado vegan roll with soy wrap was good too but again both these rolls were very simple so if you are wanting more colors veggies or fancy sauces with customization I got the feeling the staff would be very accommodating. LOCATION PRO TIP: It is in a 2 story building on the 2nd floor. Parking is only tricky in that there is a tight strip in front but ALSO an underneath lot (w/ handy elevator if needed) AND a lot up behind the building. Both the underground and top lots are on the right side when facing the building. For trucks I advise the top lot."
