"When I think of Virginia BBQ I think of Pierce’s down in Williamsburg. Smoked pulled pork, tangy bbq sauce with a little sweetness. For me, they set the standard. I have a new standard now and it’s Paulie’s. The key difference for me was the smoke. You can taste it, you could tell it had been cooked low and slow and had plenty of time to get a great Smokey base flavor that is not overpowered by the bbq sauce. The sandwich was also huge plenty for one person or even to split. The sides were great, had the potato salad, wasn’t sweet at all and had a great potato flavor that wasn’t hidden by too much mayo, or other things. The baked beans were solid as well, the sauce was thick so beans weren’t swimming, and the beans were also firm, not mushy and overcooked. It’s a simple place, walk up to the window, order, get your food, leave (or sit at the picnic table). So for atmosphere, for what they want to be, they’re nailing it. Overall super impressed and LOVE the smokers churning out smoke just off the road. Nice touch."
