"I'm from Memphis TN. I participated and rated the Memphis in May WM BBQ Circuit. I was skeptical when I saw a restaurant in Arizona claiming to have Tennessee BBQ and down home southern food. So I had to try. The waiting staff welcomed us quickly and for my pleasant surprise they actually had Sweet Tea. Not the overwhelming sugar water with a small tea taste, but genuine sweet tea, where sugar complicates tea. When I asked about her ribs, the owner and barbecue master knew what they were talking about. They could explain the cooking process and understand the difference between the different types of BBQ sauces. We had Fried Okra and Fried Pickles for Appetizers who were wonderful. I had half a plate ribs with the sweet sauce on the side and the spicy sauce my wife got. Both were wonderful. Back to my assessment criteria, the appearance of food was excellent. The ribs were delicately covered by binding, with exactly the correct amount of bones that stick out above to tell me they were done. They were moist even without sauce, but not full of fat. The taste was like at home in Memphis, and the owner and cook knowledge and presentation of their process showed a knowledge of how to use BBQ Ribs (smoke with low temperature, over several hours). The only complaint I have about the entire culinary experience was that they were pulled pork, so I didn't try. I guess this will be on my list for the next time I get to the area."
