"This dish appears to be simple: steamed fish with silky tofu topped with scallions. It may not sound extraordinary at first, but when you add two incredible fermented ingredients, black soybean and Hunan salted chopped chilies (duo jiao), the flavors completely transform. The dish becomes savory, spicy, and simply delicious. It makes me regret not exploring Hunan cuisine more in my youth. I am grateful that Happy Hot Hunan restaurant is conveniently located just 10 blocks from my apartment. I appreciate the variety of regional Chinese cuisines available in New York City. Growing up on mostly Cantonese cuisine, such as dim sum, Chinese BBQ, and Chinese American dishes, I urge you to step out of your comfort zone and try something new next time you're in the mood for Chinese food. However, even if you don't, Happy Hot Hunan also offers some of the most delicious chow mein I've ever had."
