"If you're looking to order catfish, make sure you're getting exactly what you asked for. The large fish fillets with white meat that are sometimes called "cats" in Asia are not the same as catfish in the USA - they are actually a type of fish called swai. Many restaurants in St. Louis advertise catfish, but when questioned, they admit it's actually swai. I had a conversation with the manager of a fish restaurant who had falsely advertised catfish, but when pressed, they acknowledged it was not actually catfish. I urged the manager to price their dishes accurately and not sell alternative fish under false pretenses. While it may be cheaper to serve swai instead of catfish, I personally would rather pay a higher price for the real thing. As someone who has eaten plenty of catfish, I consider myself an expert on the subject."
