"Les Nomades is the quintessential French restaurant. Dignified but not stuffy, a staff knowledgeable and responsive without being obtrusive, personable and caring about your experience. On offer is a four- or five course prix fixe dinner, with a la carte also available. Our menu presented a limited variety of seafood main courses (three our evening) and five meat dishes. We ordered sole and loup du mer, both delicate with interesting vegetable preparations. Wonderful as these entrees were, my kudos for the evening go to fois gras in a consommé and the wild mushroom soup (it’s decidedly not “just” mushroom soup) among the many starters and a transcendent Grand Mariner soufflé, worthy of sharing, for desert. In 50 years of fine dining (some in neighborhood Paris restaurants), this is the best soufflé my wife and I have ever enjoyed. Its cuisine is quality of the first order.
