"Cashew Chicken w/Rice Special. I attended college at Evangel in Springfield during the cashew chicken craze in the mid 80 's developed a true love for 'Springfield style ' cashew chicken. There was a little drive thru Chinese restaurant that we would eat at nearly ever Sunday night because the cafeteria wasn 't opened on Sunday evening. That place was bulldozed down, much to my dismay, but after a visit to Springfield (I live about 4 hours away) a short time later I discovered Hong Kong Inn 's cashew chicken...we go there at least once every time we visit the area now (at least once or twice a year). We once even drove 4 hours, had their amazing cashew chicken, went to Bass Pro, then drove back home...all in one day. There are Chinese restaurants where I live that advertise 'Springfield-style cashew chicken ' but they are not even close! Keep up the good work HKI!! You have fans in St. Louis!"
