"Helen Early and her new management team will prove to be the demise of Stube’s 4-diamond experience. In just one year, the change in management and mentality of Stube’s dining has lead to the exodus of decades of experience and some of the best team members. The shift to a more chic dining experience has resulted in new decor clashing with the building’s natural timber feel, a loss of personalization after nixing the personalized menus, and a drastic decline in the culinary experience. Shifting a 7-course dining experience to a chic middle-class menu has destroyed dining here. With only a half dozen entree options, French fries in place of fois gras, and a decrease in portions now leaves the customer underwhelmed and wishing they had planned their special dinner elsewhere. Instead of pushing to pursue the accolades of Charlie Trotter or Eleven Madison Park, the new Stube management has opted to downgrade in pursuit of every decent-but-not-great modern restaurant you can find in The RINO or LODO districts of Denver. We were incredibly disappointed in the decline of everything Stube has built its reputation upon. Until the impeccable dining experience is returned, we see no reason to return again."
