"Throwback to about over a week ago at Fairfax's Pizza Romana. My friends and I got their cured meats, black truffles pizza and short rib pizza with kale. Introduction: In terms of their pizza, why come here? They ferment their pizza dough for 24 hours, that's why. When it comes to pizza, it's best the dough is allowed to ferment for 1-3 days but no more than five. Fermentation causes the flour's protein and enzymes to untangle and forming interconnected links to the gluten: in short it enhances the dough's texture and causes it to become chewy, light and airy. Food: Their cured meat is fresh, clean and smooth: it's good prosciutto through and through. The black truffles pizza here is a disappointment: they use neither real truffles shavings nor legitimate truffle oil at the very least. What they use for their truffles pizza is a sauce concoction that is deprived of the flavors and aroma of the truffles. I had the bright but foolish idea to bring my own truffles and have them simply put it on the pizza. Simple right? Unfortunately they didn't know how to work with the ingredient and thereby burned the truffles on the pizza: the pizza comes out being devoid of the earthy flavor and fragrance of the truffles. In terms of their short rib pizza it's definitely very good: the fall off the bone tender chunks of rib meat mixed with gorgonzola cheese and kale is a winning combination. It is rich and savory with the flavors layering on top one another. Their braised short rib pizza offers a memorable culinary experience. Service: Adequate. Ambiance: Casual and contemporary in its decor. Price Affordable. Advice: Do not advertise things you do not have or don't do well but instead stick with what you're good at. Patrons such as myself hate being lied to. Overall: The establishment offers good value in terms of their price in combination with their culinary execution and the quality of their ingredients. The only problem I have with them is the fact they claim to do a black truffles pizza but they evidently fail to do so to the point they don't even know how to work with the ingredient when it's given to them."
