"Lake City, CO is a wonderful, historically significant town in the San Juan Mountains . It is also the most remote town in the contiguous 48 states. It really is like stepping back in history 100+ years ago with some added modern amenities. That being said, I can fully appreciate that its remoteness not only creates a great, laid back environment, free from the rush of urban life, but it also very probably creates a significant increase in the price of everything from gasoline to the food which is delivered from so far away. Climb Elevated Eatery is attempting to provide a fine dining experience, and if you're a carnivore, then you can have all types of dead flesh, but the vegan options are almost non-existent. The Southwest power bowl I ordered had to be veganized' with a lemon vinaigrette (in place of an adobe creme). Keep in mind this is a bowl of corn and quinoa, with some black beans, some diced red and green bell peppers, and pepitas. It was very tasty (and also included a very non-descript side-salad), but no matter how far away you are from any other town, $17 was simply outrageous. There appeared to be only one other item on the current menu which could be veganized: Do the Loop Salad At $17, including chicken and goat cheese (which further illuminates the absurdity of the power bowl at the same price with no meat or significant protein option), once you remove the chicken and cheese, you've essentially got a $17 side salad. My advice, make sure you bring a cooler with vegan groceries if you're going to spend anytime in Lake City. Updated from previous review on 2021-06-05"
