"I've been eating at Orenchi Beyond for years and I'm seriously impressed as they have expanded their vegan offers from a single raven on two sides of vegan articles (including several vegan ramen). They also finally offer correct reef noodles for vegans while they only had rice noodles that were usually found in Pho. Very impressed. Only Grip is I ordered the tomato rays and did not expect the cauliflower to be picked up, I will ask them to remove the next time, but overall this place is always a winner in my eyes. I was a little skeptical when I saw this version of vegan ramen, it seemed more of a soy-based broth and did not look creamy (like some of the vegan offers in other restaurants ... it also had aubergines that is not an attractive vegetable for me (I am a picky vegan, yes, picky with my vegetables too. But really, I have eaten so much ramen lately that I honestly do not need to eat fat, creamy broth all the time, so this is a good option! Anyway, I got my aubergines free arms and was happy to see the bowl was loaded with some other vegetables, such as cauliflowers, tomatoes, peppers, etc. The noodles used also seem to be rice noodles that were actually a good idea. The broth was well flavored and you also have the opportunity to make your dish with some garlic (a glass of it is on the table. But if you like spicy (as I do not order the spicy fog paste. On my request, they let me know that the fog paste has fish in it.
