"the novi chophouse has long been my way to drive space for business meetings. to my surprise the whole menu was recently overhauled. Apparently, the holiday home is the first restaurant in the usa to 100% wagyu bark, which seemed very interesting until they travel. my beloved ny strip was now $85, and other “classical” cuts went as high as $120. when they realized that not everyone wants to pay so much for a steak, they offered “butt cuts” that were sirloin, flanks and related in the $30 $59 series. we went with the sirloin and it, honestly, quickly realized that it was still a secondary bark at a premium price. the rest when the meal was good, including the side and service. I think the wagyu idea is certainly thinking out of the box, but I think it will be a hard for many customers to pay so high prices for the cuts they expect at a high end steak house. I hope they consider bringing some of the old menus, prime level redirects back to a better price point."
