"Id imagine for being the only bbq in the middle of no where colorado, this satisfies the locals. Ive had texas bbq and I try not to judge based on that, however I myself am pretty decent at smoking ribs and brisket so I usually compare to what I can do. We tried the onion rings, fried pickles, wings, st louis ribs, brisket and chicken sandwhich. Fried pickles were decent. 3 stars Onion rings were average, a little too battered for my liking. 3 stars Chicken wings were the highlight of the meal with their maddie sauce. Definetely big and juicy. 4 stars. St louis ribs were completely fall off the bone, which I prefer them to hang on a little, but tear off easy. Also, they were pretty flavorless unfortunately, as if they had no rub pre cooking. 3 stars Brisket was also pretty flavorless even though it had a nice smoke ring. The brisket wasnt dry, but it wasnt that pull apart either. 2 stars Chicken sandwhich was MASSIVE and very juicy, the cold slaw wasnt too good that was on it which I feel like really would have pushed it into a 5 star sandwhich. 4 stars I will say their prices are incredibly fair which almost makes me want to give it a 4 star overall, but I judge based on qaulity and flavor. I think most people reading this would agree with the following statement. The difference between great bbq and mediocre bbq is great bbq doesnt require sauce and in most cases sauce would ruin it, while mediocre bbq needs the sauce. Unfortunately, this bbq needed sauce.
