"1) They were packed, @12:30PM SAT you have to sign-in and wait, 20-min was our wait, no biggie. 2) They were packed and service was spotty, wondering how much slack they should be cut since they should know what their lunch is like on a SAT – a staffing consideration on their part on which they failed, staff amiability was 50-50, our female server was accommodating whereas the male was seemingly always put-out; perhaps why males tend NOT to be used much in the front of true japanese restaurants. Serving and front skills should be required and not optional. 3) They were packed and one person at our table who ordered the Tokushima ramen broth got served a bowl of it that was anything but HOT, to serve as proof the raw egg served with this bowl of ramen, though room temperature, did NOT cook in the broth – the gelatinous portion of the egg white remained throughout to the end and had to spooned out. There is no excuse for the server to allow a bowl to languish so long as to ruin the work from the kitchen. WE didn’t but customers for a basic menu item should not have to point serving errors out to the staff for said simple an order, it was not a custom order. They were packed and that kind of fail does happen and will happen, in spite of that we will go back. 4) They were packed and I had the regular Tonkotsu (pork bone broth) with a seasoned hard-boiled egg that was soft-yolked inside though cooked, which comes with kurobuta, very soft and tasty. I would have this one again before finding another to try. 5) Agedashi tofu and chicken karaage, both sublime and wonderful morsels served as smaller bites served true to their original presentations. You cannot go wrong lest the cook have an off-day. 6) Will go again to see if #2 or #3 were exceptions to the rule. One should not have to point serving errors out to the staff for simple menu orders that have NOT been customized. 7) Will go again because the food was delicious, and the prices are reasonable, plus I want to see if other firends think so. 8) The food is so good, they will be packed next time or anytime till such time they lose their status. 9) Management know that your staffing can be inadequate and cause fails from which you will not recover. Pay attention to the front."
