"By Seattle BBQ standards, Bitterroot is quite good, but by southern standards, it's lacking a lot. The meat is generally well cooked, but the cut on the pork ribs is inconsistent and, at times, will be delivered with the membrane and tendons still attached. The sauces are genuinely very good, especially the spicy sauce, and they have the best North Carolina sauce I've found in Seattle, but the fact that it needs sauce to be good is a problem. The ribs come out already coated in a sauce and are missing the flavor of the dry ingredients that they probably don't apply to them. The brisket is very tender, again very well cooked, and is probably the safe bet to order, but was quite dry one of the two times I've had it so sauce may be needed to moisten it. All that said, it's not a bad place, and in Seattle, you're hard pressed to find better."
