"Since we wanted a restaurant rather than a food court vibe we went to Cantina Laredo at the Mall of America. Also, I read here on Happy Cow that they have a vegan menu. Luckily I knew to ask for the separate menu, since it wasn’t mentioned as an option. I had the enchiladas, which had artichokes, poblano peppers, avocado, and a verde sauce on top with roasted red peppers to garnish. Except for the avocado, the ingredients were not fresh, but still pretty good. I wondered if the salsa that came with the chips was Frontera brand? Not a fan of the salsa. I kept wishing they had a vegan queso. The chips were light, crisp and addictive. My favorite part of the dish was the black beans. They actually seemed house made, not overly salty, and very flavorful. I would return just for the beans and chips (and an order of table made guacamole which I didn’t get this time.)The service was polite, though everyone seemed over extended."
