"Since we wanted a restaurant rather than a food court vibe we went to Cantina Laredo at the Mall of America. Also, I read here on Happy Cow that they have a vegan menu. Luckily I knew to ask for the separate menu, since it wasn’t mentioned as an option. I had the enchiladas, which had artichokes, poblano peppers, avocado, and a verde sauce on top with roasted red peppers to garnish. Except for the avocado, the ingredients were not fresh, but still pretty good. I wondered if the salsa that came with the chips was Frontera brand? Not a fan of the salsa. I kept wishing they had a vegan queso. The chips were light, crisp and addictive. My favorite part of the dish was the black beans. They actu...

I love that they are a pretty good size vegan menu. it is not published online and they need to ask for it, so I have made a photo. the enchiladas, chips and salsa are great. salsa may be the best I ever had. my waiter said it was homemade.

I asked for the vegan menu and had a hard time choosing between tacos, the burrito, fajitas enchiladas. I went with the enchiladas which were great, and they came out super fast. The tomatillo sauce has nice heat, and the black beans were cooked perfectly. The guacamole is a little chunky, which is how I prefer it but note that they’ll ask you if you want it then not tell you it’s $6 (different from the table side guac).

We enjoyed having a full service experience inside the mall. There is a separate vegan menu and separate vegetarian menu as well. They bring house chips and salsa to start and their salsa is wonderful! The two of us (me-vegan, my boyfriend omni) ordered table side guacamole and Enchilades De Aquacate and split them. We even had left overs. The first order of enchiladas came with cheese on the beans but they quickly fixed it- so just be sure to say you are vegan.

"not sure how to start with an honest assessment at all. birthday dinner for me and the woman. two burgers ordered, medium well tempos. the burgers received them and they were well done, dry and a bit carved. the server stopped when the food was delivered and she did not see it again until it was time for the check. had a general manager there in the meantime to appeal to the burger. asked the gm what they thought that the temperature of the burger he was paused (as if he tried to find out what I ordered) and came back with a medium well answer. burger had zero pink in him (see in the pictures.) he said nothing else, not I'm sorry, is what they ordered, or how can we do that better for them. Nothing. I took the plate, shook his head and went away. I can't even put this stuff up if I wanted. had the jack, mentioned eating to the server, they asked us if we wanted dessert, we went back and that was it. no birthday or a good night. we felt kind of like we had done something wrong, no matter what, honestly, if they were looking for good quality food and great customer service, they don't come to pittsburgh blue. they can get a lot better food everywhere too much better preisen! we have been driving for years to pittsburgh blue, especially the location edina and the quality/customer experience have been falling for years. why did we go back? big question, we advise that we hope for this complete dinner (customer experience and food quality) that we have many years ago. by the way, pittsburgh blue also calculates a 5% safety/benefit fee, not sure why!? I have not seen anything justifying a complaint (sanitizing, etiquette, etc.)"
