"Although they do not offer a “whole wheat” crust, they do have a tasty, “gluten-free” crust made from polenta that is made from imported, non-genetically modified corn. The gluten-free is interesting, and distinctive – a nice find for people with dietary needs. Although this is a “semi-chain” restaurant, they are very limited, and very local. They offer individuality that the big chains just can’t do. You’re going to find thin-crust pizza made to order from mostly locally culled ingredients. The restaurant tries to be socially, and environmentally responsible, as well as politically correct, but I did find it odd that the owner would tell me this while wearing leather shoes made in a slave nation – hmmmm. I guess the commitment only goes so far. Nonetheless, it’s still a good start and a darn good pizza – no preservatives, dough made on site, and nothing is ever frozen. It’s almost as healthy as pizza can get. If you’re walking by, you can buy pizza by the slice for $3.00, with an additional charge of .50 per topping. I’d say that’s no great bargain, but you have to consider that it costs a bit more to be responsible these days. Another unique aspect of this restaurant in the Highlands area is that it “shares” its location with another entrepreneur. During the morning and noon hours, the place is a coffee/sandwich shop, and the pizza only comes out at 4:00 p.m. I like that idea – just another fresh concept from the Highlands area."
