"I watch a LOT of food shows on TV. I think it has to do with constantly trying to keep my inner fat guy at bay. Like...I 'll watch, and look, and yearn....but never touch! And there 's a handful of dishes and styles of food that I 've seen multiple times and added to my bucket list of things to try. Right near the top there would be fancy Ramen Noodles. I mean, just seeing people eat these HUGE bowls of Ramen with all kinds of goodness made my mouth insta-water. So when out of the blue my son says to me Dad, we just ate at this AMAZING Ramen place in New Haven and you HAVE to try it , that inner fat guy began to tremble. We ended up at Midnight Ramen less than a week later and it couldn 't have come soon enough. The place is pretty unassuming from the outside and apparently was/is also a Sushi place? I don 't know, a bit confusing but yes...my body was ready for this. The inside of the place was cozy and very comfortable and causal. Atmosphere-wise, I was instantly in love. We were seated right away and offered water and menus. In the cases when my son has eaten somewhere first, I 'll almost always go with his recommendation from the menu. In this case, that would be the spicy Miso ramen bowl with pork belly....(shudder). I also decided to check out the KFC Bao appetizer that seemed to be nothing short of magical from what I read. The apps came out quickly, and let me just tell you this: That KFC Bao was one of the most amazing things to ever dance on my tongue. And trust me when I tell you, my tongue has been around the block once or twice. Just amazing. The food came out quickly and the timing was perfect. I had order my ramen super spicy if possible , and it came out accompanied by a small little bowl of what looked like liquid chili fire. The waiter had only 2 words for me, be careful . So here 's the thing, when something is spicy/hot, that can cover a wide range of flavor profiles. I mean, there 's like straight chili pepper hot, smoky hot, sweet hot, etc. It 's a spectrum. The best way I can describe the paste they gave me is by saying all of the above . It was hot, REALLY hot, but it wasn 't just raw heat. There was a TON of flavors going on there. Just really unique and amazing and highly recommended. And oh, yeah...the Ramen...also, amazing. As good and better than I had always hoped and instantly moved to the 5 of my ethnic food loves. Our first time there was about a month ago, and we 've been back 3 times since. Never a hitch in food or service or any aspect of this place. 6 stars if I could."
