Gustav - Étlap

I was yesterday at Gustav one Michelin star. It might be too abrupt of me to say that I put my hands on fire for this proposal. It is certainly pleasant and honest, but I felt it lacks of surprises. The place has a...slightly low-energy inconsistent decoration. Maybe there is an overall charisma issue which keeps you slightly distanced from the experience. I would certainly repeat, nevertheless.

I was alone and requested the bright corner table, the restaurant accepted but arranged a 'working table for me (put wine, many wine glasses and menus on the table, just remained one-person dinning space), When I had my dinner, staffs came to my table taking...and putting stuffs frequently, made me felt annoying. When serving the dishes, it was normal speed in the beginning, then became so slow after the trout, I needed to wait minutes after every dish, it was not ideal waiting time. Regarding the flavour, trout, steamed rattling sponge, grilled cabbage and iced pumpkin impressed me; for the beef soup and grilled duck breast, meat was tender, but the entire dish was too salty. For a risk-adverse and relatively conservative restaurant town like Frankuft, GUSTAV is daring, avante-garde, even a bit difficult. Styled like a modern bistro with a relaxed, informal service team, the average diner does not realize how serious and solitary an experiment they are about to...experience in all its plenitude. Jochim Busch places in front of you plates laid out like a dense forest, every ingredient clinging to every other ingredient. On all sides of his plates you sense the pull of some inert natural form, tugging at the sides, like an abstract expressionist painting with deep contrasts and a complex structure. Watching him work the passe with his tweezers his flexible fingers...
