"One opens the door, enters and feels in the museum: old panels on the walls, over shells, shells, mussels, mussels, silver shiny mother of pearl, models of historical ships, a gallion figure there is hardly any free place, the diversity is hardly to describe, is always fascinating and shows itself as quieter business hours. The eye proves that the dense furniture, the bassin, in which slumbering lobsters wait to be thrown into the boiling water, the grill in which a wild boar rotates, and a matching fur on which a buffet is dressed. Because it is not a museum, it is a restaurant for guests with high standards, for me the most stylish in Büsum. And it's not cheap. Of the three-digit prices on the wine card you do not have to be frightened. It's also a little cheaper. We expect to pay €100 for a nice evening. Despite the extraordinary ambience, it is not a place for snout. Jeans guests are welcome. On his lap through his room, the boss calls everyone a kind greeting. In the third generation, Chef Karl Heinz Kolle runs the restaurant, which comes from an old pub. He is a kitchen master, hunter and heger, the latter especially in honorary function for the seals that can no longer be hunted. Hunter explains the wild boar and the further autumnal offer of wild, which the boss brings together with the vegetables of the Dithmarscher home to the table. There is also the typical offer of fish and other marine animals for a port location. It is worth scrolling down the menu because beautiful local photos can be found on its edge. During our current visit we ordered a menu that seemed like a special offer for tourists with a price of €21.90 in this area. Accordingly, we were amazed that we even received a more elaborate greeting from the kitchen, a sanctuary of fats and vegetables on a bed of carrots. After a pasta cake soup with duck breast strips there was a wildragout with croquettes and two types of cabbage. Everything was top in quality, freshness and preparation, only with the croquettes remained open the question whether it was an industrial product. The red cap with vanilla ice cream and cream served as dessert was comme il faut. The service was as we wish. The young waiter seemed more like a best-in-house son: charming, inconspicuous, explaining and routine in serving. So is everything perfect? I have to say something: The lamps with the screens of fabric are so beautiful, perhaps you will find for them, despite the Brussels control lights, which all emit the same light color. Update from summer 2020: This with the lamps is ok now. This year the Kolle family opened a newly built hotel next to their old family house. 24 rooms have it and they are equipped with custom furniture. The first guests were a bridal couple, so the senior manager told me, and the charge sample was good over the bed..."
