Definitely worth a ride from San Diego to Borrego Springs. The food at Fox Bistro is absolutely exquisite. The flavors are amazing. The elections are endless. attention to detail is absolute perfection. Take a day trip or treat yourself and spend a few nights in this fabulous resort. While we were at Casa del Zorro in Borrego Springs, we had dinner at Fox Bistro. Delicious drinks prepared by Jerry, the bartender started us. I had the wedge salad, one of the best I ate. Many bacon, blue cheese and drizzle by Balsamico vinegar on the top of the dressing. The Chilean sea bass was moist, firm and imposing presented on expertly done Risotto with a citrus sauce complimenting the plate. A bottle of Napa Valley Rutherford Vintners Cab paired with fish. In view of the heavy rain and flood warnings, they were ready to deal with the visitors and locals who visited this evening. Thank you.

Bed short ribs were solid. Delicious gourmet dining place in a desert oasis, perhaps not worth the trip on your own, but solid for resort food and surely the best fine food in a 40-mile radius. Meals were classic standards with table service that tries to please vs tries your patience. The Cambozola Cheese Plate does not gain novelty points from the Instagram crowd, but we finished it and would do it again. Minestrone was served warm (w sausages? no pasta) was pleasant, but the hot rolls w butter were a bigger hit on our table.
